Brownies are totes the new Banana Bread of Lockdown,right?…Or maybe it’s just me. Or maybe I’ve always just been a brownie fiend and will always have a weakness for them, regardless of lockdown. But this is the one thing I’ve been making every week in lockdown, so it’s kind of become quite a staple in our home. And now we’ve added these TWO divine variances to the mix, and I just cant get enough. There’s another recipe I’ll share with you soon, and could just be my MOST BELOVED one of them all. But for now, here’s two I’ve had on repeat.
It all started when my 2 year old Yuriko-Mae desperately cried for chocolate one day…and I mean like PMS’ing, I will have your head kind of chocolate cries. I mean, I can dig it. I know those cries, because I’ve had them a few times in my life. But we didnt have chocolate in the home, nor was I going to temp ‘Rona by frivolously going out to the store quick just for chocolate bar. So I decided on the next best thing: Brownies! Their cocoa goodness was sure to hit the chocolate spots my girly was looking for.
Also, seeing Simone of Mama to the power of four whipping up a batch of her coffee brownies (see her baking Highlights bubble), I felt motivated to get it on…with my baking spoon. And here you can too. I mean brownies are the easiest ever. And the most forgiving of all baked goods.
Ps. I like my brownies classic, but not too sweet (so feel free to add more sugar than what I use)
SALTED CHOCOLATE BROWNIES
What you need:
-1 cup melted butter
-4 eggs
-1 1/2 cups flour (use only 1 cup for a more “fudgier” brownie)
-1/2 or 3/4 cup cocoa
-3/4 or 1 cup sugar
-pinch of fine sea salt
-1/4 teaspoon big grained salt (keep aside till the end)
-1 or 2 Tablespoons of chopped up chocolate (this can be baking or normal milk chocolate, it doesn’t matter – I used white baking chocolate because I ate the rest of the milk chocolate. #truth)
Method:
Preheat your oven to 180’C
1. Cream butter with sugar and the pinch of fine salt
2. Add in eggs, and mix till all combined
3. Sift in flour and cocoa
4. Once all mixed together, line your baking tray with wax paper and either use cooking spray or butter it up to prevent sticking.
5. Pour in some of you brownie mixture, then sprinkle half the big grained salt, and all the chocolate pieces.
6. Then pour the rest of the brownie mix in and then top it with the last of the big grained salt.
7.Pop into the preheated oven for 30 min…and try not to eat all in one go! 😉
PEANUT BUTTER BITE BROWNIES
You will use the basic recipe as above, except you wont need the chocolate bits.
I keep my salt pieces in as I love the pop of flavour this brings as well as the contract of sweet and salt.
The only difference is just before you pour your batter into the baking tray, dot the baking tray with about 10 to 15 small dollops (about 1/2 teaspoon) of peanut butter. Pour 1/2 the brownie mix over that, then drop a few more peanut butter dollops on that. then pour the rest of the brownie mix. (feel free to add more peanutbutter)
Pop into the preheated oven for 30 min as per usual recipe and enjoy!
